The Salmon

What You Need:

4oz. – 6 oz. Salmon Filet (you can bake as much salmon as you want)

Butt Rub (or another chipotle seasoning)

1 tsp. Brown Sugar


Pre-heat your oven to 425 degrees. On a foil-lined pan, place the salmon filet skin side down. Sprinkle 1 tsp. of brown sugar and a little butt rub seasoning on the filet. Bake for 10-12 minutes.

While that is cooking you can make your salsa.


The Mango Salsa

What You Need:

2 Mangos peeled and diced

1 Jalapeno chopped finely (optional: leave in seeds/ribs for extra spice)

1/3 cup Red Onion diced

2 tbsp Lime Juice

1/4 cup Cilantro Leaves roughly chopped

Salt & Pepper to taste


Simply mix all the ingredients together and pour your lime juice over the top. Season well with salt and pepper to taste. (When mangos are in season this is so good and you can eat with other proteins as well.)


When the salmon comes out of the oven, top with a few spoonfuls (or more : )) of the mango salsa. I usually serve this with some asparagus and white rice for extra carbs. Enjoy!
