When we were at a family party recently in Cleveland, we had a really good dessert, and when I was sent the recipe I couldn’t believe how easy it was. The only hard thing for me is when everyone is raving over how good something is, and Jaxon is asking for it, but can’t have it because of his dairy allergy. If we are at a party I usually throw a pack of fruit snacks in my purse and offer those to him when other kids are having dessert.
Once I got this recipe, I decided I would make it to take to my nephew’s birthday party but I was going to change all the ingredients to make it dairy free. That way Jaxon could have a fun dessert while others were eating cake (even though my sister got him a vegan cupcake because she’s the best!)
This actually turned out great, and this is how I did it….
Dairy Free Strawberry Cheesecake Dip
What You Need:
1 (8 oz.) package Dairy Free Cream Cheese, room temperature
1 (8 oz.) package Dairy Free Frozen Whipped topping (thawed)
1/2 (7.5 oz.) Dairy Free jar of Marshmallow Creme
2 cups Strawberry Pie Filling
1/2 teaspoon Vanilla Extract
1 Box of Back to Nature Honey Graham Sticks for dipping
In a large bowl or mixer, cream together softened cream cheese and marshmallow creme for 2-3 minutes, or until blended and smooth, then mix in vanilla extract. (with the dairy free ingredients I was able to just stir everything together and did not need a handheld mixer)
Gently fold in whipped topping until incorporated.
Spread mixture into an even layer in a 8 or 9-inch square baking dish.
Top with an even layer of strawberry pie filling. (recipe calls for cherry, but I like strawberry better)
I put mine back in the fridge for an hour so everything could get cold and harden back up a bit.
*using a square pan so you can spread the dip in a thin layer is best, that way you get the strawberry topping, and the cream cheese mixture all in one scoop. If you pour the dip to deep in a pan it doesn’t work as well.
