Here are the dinner plans and grocery list for this week. I’ve included all the ingredients I need for each dinner plus some other staples I need for the week. All the dinners are dairy free
Monday – my plan for the sweet potato nachos is to thinly slice sweet potatoes into rounds and roast in the oven. Then top with crockpot shredded chicken, dairy free shredded cheese, and black beans and throw under the broiler. Once they come out I will top with green onion, red onion, salsa and cilantro.
Tuesday – I love making pork chops with sautéd red onion and red apple slices. I’ll also roast a pan of broccoli, carrots, and cauliflower. If we need more carbs we’ll have rice or a sweet potato with this.
Wednesday – Lazy…I’m planing on buying a Taylor Farm’s stir-fry kit, adding my left-over shredded chicken, and putting it over rice.
Thursday – Another easy one…I’ll roast spaghetti squash, and top with a ground beef marinara sauce and serve with some of the left-over roasted veggies from Tuesday.
Friday – we are going to ZBB concert, but before we go, I’ll use the last of the shredded chicken in some soft shell tortilla tacos.
