Another easy, healthy, weeknight dinner for you…
What You Need:
1 tbsp of Olive Oil
2 cups of frozen Lima Beans, thawed
3 cups of Corn (frozen or cooked and cut off the cob)
1 Yellow Summer Squash, diced
1 cup Grape Tomatoes, halved
1/2 a Red Onion, diced
Juice of 1/2 a lime
Chicken Breasts (as many as you are cooking for)
Salt & Pepper
Heat 1 tablespoon of olive oil in a pan over high heat. Add onion, squash, lima beans, and corn and cook until tender and translucent, about 2 minutes. Add the tomatoes and cook for 2-3 more minutes. Season generously with salt and pepper. Stir in the lime juice.
For your chicken breasts season well with salt and pepper. Then you can grill, use a grill pan, or skillet to cook. I bought chicken tenders that were thinner, to save time, and cooked on the skillet over medium-high heat for about 3-4 minutes per side. Once cooked through, plate along side the succotash and drizzle the chicken with the balsamic glaze.
