I hope you all had a great weekend! We had family and friends here all weekend celebrating Jaxon’s 2nd birthday, so I didn’t get a chance to grocery shop or meal prep today. However I did get a chance to plan everything out, and tomorrow I’ll take the time to get all set for the week. Here is what our dinners will look like.


Monday – We have some leftover bbq shredded chicken, so I am going to use that in some soft tacos and also make some cauliflower rice and top with cowboy salsa.

Tuesday – I’ll probably just buy some low fat turkey burgers and cook on the stove and then top with some spinach, red onion and a pineapple ring. We really like the chipotle Alexia sweet potato fries, and the macros are good, so I’ll serve those and some roasted broccoli with the burgers.

Wednesday – I’m going to bake some salmon and serve with rice and roasted veggies, probably just a bag of cauliflower, broccoli, and carrots and that I’ll roast in the oven.

Thursday – I had a really simple bruschetta recipe that I would make all the time, years ago, and thought it would be great over some baked chicken, and since it’s a rest day and we are on lower carbs today, I’ll serve over zoodles.

Friday – Ryan says he’s grilling steaks : )
