What You Need:

3 Chicken Breasts (you can always cook more/less)

2 Cloves Garlic, minced

¼ Cup Chopped Fresh Basil

2 Cans Hunts Diced Tomatoes (w/ basil, garlic, oregano)

Balsamic Glaze

20oz Zucchini Noodles (more/less depending on how many serving)

Salt & Pepper

 

Preheat oven to 350.

In a bowl add the two cans of diced tomatoes and mix in your garlic.

Season your chicken breasts with salt & pepper.

Use an oven safe pan and brown your chicken breasts on one side over medium/high heat for a couple of minutes and turn over to the other side. Top chicken breasts with about 1/3 cup of the diced tomato mixture.

Cover the pan with a lid and place in the oven for 20 minutes. (cook time may very slightly depending on the size of the chicken breasts.)

In a separate pan sauté your zoodles over medium/high heat for 5-7 minutes. I then drain mine, as they produce a lot of liquid. Place back in the pan and then add in the extra diced tomato mixture to heat through.

Serve a big helping of zoodles with a chicken breast on top. Sprinkle with the chopped basil and drizzle with balsamic glaze. Enjoy : )
