What You Need:


5 cups cubed Sweet Potatoes

1 Apple diced (any kind you like)

1 Red Onion diced

8oz Bacon cut into 1/2 inch pieces (I use Applegate uncured)

18oz shaved Brussels Sprouts (I use two bags of Archer Farms)

Butt rub seasoning optional, or salt and pepper


Preheat oven to 425 degrees.

Season your cubed sweet potatoes with Butt Rub and roast at 425 for about 30 – 40 minutes, or until tender.

While those are roasting cook your bacon in a large pan over medium/high heat.

Then add in the ingredients in the following order (right in with your bacon)

1. Red Onion (cook until translucent)

2. Brussels sprouts (2-3 minutes)

3. Apple (2-3 minutes)

Once the sweet potatoes are done add those to the pan as well. Season everything really well with Butt Rub, or if you do not have that you can add salt and pepper and garlic powder, or whatever seasonings you like.


This makes a lot and is very versatile. My favorite thing is to have it for breakfast or lunch. Just pull it out of the fridge, heat, and cook a couple of eggs over easy, or whichever way you like them, and put them on top of the hash. It also makes a great side dish, and you can even leave out the bacon if you want a vegetarian version. Another way I like to make it is with ground turkey, instead of bacon.

Also, ingredient amounts do not have to be exact. You can always sub different ingredients for what you have on hand. Have fun with it!
