What You Need:

1 Package Chicken Sausage, cut into 1/2 inch pieces

1 bunch Kale, chopped (about 4 cups)

8-10 small Yellow Potatoes, quartered

1 Red Onion, chopped

1 Red Apple, chopped

1/2 tbsp of Olive Oil


Cook the potatoes in boiling water until tender, drain when they are done cooking and then set them aside.

Heat a large pan on medium/high heat and add the olive oil, and begin to caramelize red onion for about 2-3 minutes.

Next add in your chicken sausage. (Mine is already cooked, and I am just heating through and browning up.)

Once the chicken sausage is about done, add in your apple and then add in your kale and toss to cook down.

Lastly add the yellow potatoes to the pan. Season with salt and pepper and scoop into a bowl.
