Sometimes when I don’t feel like getting creative with dinner, or don’t want to be in the kitchen long, I’ll throw together a breakfast. It seems like everyone usually likes this change of pace, so I take advantage of this super easy dinner that I can throw together in about 10-15 minutes!
What is on the Menu?
Egg/Egg White Scramble with veggies
Van’s Power Waffles (frozen, just toast them)
Berry Compote (to top waffles)
The Bacon: I love using Applegate’s Uncured Sunday Bacon. I just cook this up on the stove to start.
The Berry Compote: In a small saucepan add 1 cup blueberries and 1 cup chopped strawberries. Place over medium heat and once they begin to bubble, smash down the fruit a bit with your spoon. Continue to cook on low and stir for about 5-7 minutes. We have been topping our waffles with this instead of syrup. It’s great on everything though…waffles, pancakes, ice cream, bagels, etc. (and no added sugar!
The Egg Scramble: While that is working, I start the egg scramble in another pan. Simply take any veggies in your fridge that you want to use up. I usually sauté some cherry tomatoes cut in half and some spinach, and red onion. Once those are wilted down, just crack your eggs or pour in your egg whites. Stir around the pan until cooked, and salt & pepper to taste. You could also add in some cheese.
The Waffles: While that is going on just thrown some Van’s Power Waffles (these are dairy free!) in the toaster. They just take a few minutes and have great macros. Each waffle is 13g carbs/ 2.4g fat/ 5g protein. Jaxon loves these two. I cut them in strips and let him dip in maple syrup.
That’s it. You are ready for your dinner, or of course you can always make this for breakfast, especially for a quick warm breakfast on the weekends. Enjoy and have a great weekend : )
