It’s meal prep Sunday, and I know a lot of you are probably throwing your chicken breasts into your crockpot and letting cook, so you’ll have shredded chicken for the week. We make this about every week, but it can get boring. Chicken, chicken, chicken….

So here are my top ways to use shredded chicken from the crockpot. I hope this spices up your week a bit, and makes your chicken delicious again, and a little less boring!

 

White Chicken Chili

It’s getting cold outside and this is one of my favorites on a Fall day. You can play around with the toppings too, or add rice to change your macros up. You can find the full recipe here.

Sweet Potato Boats

These make a great game-day appetizer and couldn’t be easier.

What You Need:

1lb Shredded Chicken

1/3 cup S & F Honey Buffalo Sauce (of buffalo sauce of your choice)

4 – 6 Sweet Potatoes cut in half, length-wise (smaller the better!)

Ranch Dressing (Bolthouse, to save on fats)

Green Onions, chopped

 

Preheat your oven to 410 degrees. Take your cut sweet potatoes and spray with olive oil spray and salt & pepper. Bake, skin side up, for about 25 minutes or until fork tender.

Toss your cooked shredded chicken in buffalo sauce. I usually just heat a small pan on the stove and throw the chicken and sauce in to heat.

Smash your sweet potatoes down a little bit and top with the chicken. Then drizzle with ranch dressing and sprinkle a few green onions on top. Enjoy!

 

Salads

Cold Salad: Dole Spring mix, cherry tomatoes, red onion, dried cranberries, cucumbers, goat cheese, slivered almonds, low-fat balsamic dressing and top with your shredded chicken

Warm Salad: Baby Spinach, roasted vegetables of your choice (cubed sweet potatoes, red onions, yellow squash, cherry tomatoes). Place your veggies over your spinach and it will wilt down a bit. Top with your shredded chicken and your favorite dressing.

 

Loaded Sweet Potato

Cut open your baked sweet potato, top with shredded chicken, salsa, avocado, and a drizzle of Bolthouse Salsa Verde Avocado or Cilantro Avocado dressing.

 

Chicken Tacos or Taco Bowl

Combine rice, black beans, chicken, avocado, and salsa. (If I have time I like to sauté peppers and a red onion, you can also add corn, cheese, lettuce, cilantro, jalapeños, etc.) You can use the same ingredients and place in corn or flour tortilla shells.
