We eat this bowl a lot, and I just realized I hadn’t shared it on here yet. It’s very simple, and packs a lot of flavor.


What You Need:

1/2 cup Cucumber, diced

1/2 cup Tomatoes, diced

2 tbsp Red Onions, diced

1 tbsp Balsamic Dressing (I use Whole Foods Balsamic, fat free, no oil)

4oz Grilled Chicken (you can use as little or as much as you want)

1/2 cup Rice

2 tbsp Hummus of your choice

2 tbsp Tabouli

2 tbsp Feta Cheese crumbles

(The amounts above are for one bowl, adjust accordingly to how many people you are feeding, how hungry you are, your macros, etc.)

Macros for above: 42g carbs/ 12g fat/ 43g protein


To make the cucumber and tomato salad, combine in a bowl the diced cucumber, tomatoes, and red onion. Pour in the balsamic dressing and toss. Set aside.

Next cook your chicken. Really you can use pulled chicken, grill it, bake it, etc. I always season mine with Butt Rub for some extra spice.

As for the rice, I use the Uncle Ben’s 90 second white rice, but of course you can cook yours on the stove.

Now that all the ingredients are ready, it’s time to assemble the bowl. Put your rice in first, followed by the cucumber and tomato salad. Next add your chicken. On top of that put your hummus, tabouli and then feta cheese.

If you have some extra carbs to spare eating this bowl with pita bread or pita chips is also great! Enjoy!
