I can not get enough of these roasted tomatoes. Today I had them with half an everything bagel with Kite chive cream cheese, and an egg. Getting a little bit of tomato and egg on every bite of the bagel was the best!

 

What You Need:

8 – 12 Campari Tomatoes, halved

2 tbsp Fresh Parsley, chopped

2 tbsp Parmesan Cheese, grated

Olive Oil Spray

Salt

Pepper

 

Turn your broiler on high.

Then simply take a foil lined baking sheet, and spray with olive oil cooking spray. Place your tomatoes on the baking sheet and spray the tomatoes with the olive oil spray. Then season each tomato half with a little parsley, cheese, salt and pepper.

Bake for 6-8 minutes, until cheese is melted, but do not overcook and let the tomatoes get too mushy.

 

Next, I can’t wait to make these tomatoes and put over zoodles!
