Have you ever needed to feed a crowd? Mexican food is always my go-to. It’s easy, cost-effective, and I mean who doesn’t love tacos?

This past weekend my family and friends all went to the Big Red Liquors  Bourbon Fest here in Indy, and afterwards were coming over, ready to eat.

Everyone enjoyed the food, and I think liked building their own tacos. As you can see by the video, things were pretty lit and I didn’t have a chance to take any good photos : )

Here are all the details, and let me tell you, it all came together in like 30 minutes!

Crockpot Chicken or Pork Tacos

About 4 hours before you are ready to serve get the crockpot out!

What You Need:

5lbs Chicken Breast or Pork Loin(or as much as needed for amount of guests)

Butt Rub to season meat

1 cup of Red Enchilada Sauce

1 Red Onion, cut in strips

1 Red Pepper, cut in strips

1 Green Onion, cut in strips

(I bought my veggies already sliced at the store to save on time.)


Season your meat with Butt Rub. Put everything above in your crockpot and cook on high for 4 hours. Shred the meet once done. If you have a lot of liquid that forms during cooking, just spoon some out, so the tacos don’t have too much liquid.

Now lets make this into a taco bar! Here is what I put out:


Flour Tortillas

Corn Tortillas

Crunchy Tortillas

Chopped Cilantro

Shredded Mexican Cheese

Shredded Lettuce

Bolthouse Cilantro Avocado Dressing

Sour Cream






Bean Dip

What You Need:

2 cans Refried Beans

1 cup Shredded Mexican Cheese

1 cup Salsa

1/4 cup Jalapeños

1 Bag of Tortilla chips


This is my favorite!

Preheat oven to 400 degrees.

In a small baking dish with sides (I think I used like a 6 x 12) pour in your refried beans, cheese, and salsa and mix together. Then spread evenly with a spoon. Bake for about 15-20 minutes until everything is melted together.

When it comes out top with jalapeños, and serve with chips. Also great to add right onto your tacos.


Quick Rice Hack

What You Need:

3 Bags of Uncle Ben’s 90 Second White Rice

1/2 cup Cilantro, chopped


Microwave each bag of rice. Dump into a bowl, and stir in your cilantro.

Now you have a big bowl of rice, ready in less than 5 minutes. Again can be added to your tacos or served on the side.


Quick Salad Hack

What You Need:

1 Bag Fresh Selections Southwest Chopped Salad Kit

1/2 cup Cherry Tomatoes, cut in half

1 Red or Yellow Pepper, chopped

1/3 cup Cilantro

1/2 Bottle of Bolthouse Cilantro Avocado Dressing

(I doubled this to feed more)


Put everything in a bowl, including the ingredients that come in the salad kit. BUT DO NOT USE THE DRESSING IN THE SALAD KIT and toss in your Bolthouse dressing. (This tastes better to me, and also saves on a ton of fat!) I tend to go lighter on the dressing and leave it out for people to add extra if they need it.


Normally I would set up everything for Beeritas! But didn’t think coming off of a Bourbon Fest for hours, that it was necessary ; )
