To be honest, when I was thinking of what I wanted to add to this bowl, I was imagining sweet potato noodles, BUT I couldn’t find them at Fresh Thyme, Kroger, or Target, so picked up butternut squash noodles instead. It was still really good, and when making this you could use either, even zoodles.
What You Need:
1 package of Butternut Squash or Sweet Potato Noodles
1lb lean Ground Beef
1/2 cup of Salsa
1 package of Frozen Corn
1 can Black Beans
In a pan over medium-high heat, brown up your ground beef. Once it is cooked turn heat off and stir in the salsa.
In another pan over medium-high heat sauté the butternut squash noodles (about 4-6 minutes). I spray my pan and my noodles with a little olive oil cooking spray and season with salt and pepper.
While the ground beef and noodles are cooking microwave your corn. Once that is done microwave your beans to heat up.
To assemble your bowl, add your noodles, ground beef and salsa mixture, corn, black beans, extra salsa if you would like, guacamole, and cilantro.
You can get creative and add other toppings as well…sautéed peppers, onions, hot sauce, cheese, sour cream, etc.
