Guys! These veggies are so good!!
What You Need:
4 pieces of Bacon, cut into bite size pieces (Applegate Uncured Sunday Bacon is awesome quality and lower fat!)
1 Red Onion, chopped
2-3 cups of Butternut Squash, cubed
2-3 cups of Brussel Sprouts, cut in half
1.5 tbsp of Maple Syrup
Salt & Pepper
Olive Oil Cooking Spray
Preheat your oven to 375 degrees. Spray a foil lined baking sheet with olive oil cooking spray. Put all of the ingredients on your baking sheet, drizzle with the maple syrup, spray with olive oil spray, and season with salt and pepper. Toss all together and spread out in an even layer.
Cook for 45 minutes.
I served as a side to left-over turkey tenderloin, recipe here. Left-overs, if there are any, would be great for breakfast with a couple over easy eggs and some toast : )
