Another Sunday meal prep went down over here, and it was quick, so I could relax in the afternoon and enjoy family and friends for the Super Bowl. I made two different lunches we could alternate this week.
What You Need:
3lbs Chicken Breast
1 Turkey Breast Tenderloin
4-5 Sweet Potatoes
1 Red Bell Pepper, cut into thin strips
1 Orange Bell Pepper, cut into thin strips
1 Yellow Bell Pepper, cut into thin strips
2 90 second bags of Uncle Ben’s Brown Rice
1 can Black Beans (low sodium)
3 bags Broccoli & Cauliflower Mix
4 tbsps Salsa
4 tbsp Buffalo Sauce
Olive Oil Cooking Spray
Salt & Pepper
(These amounts made 8 meals total, but I had a lot of chicken left over and some peppers and sweet potatoes as well. Which I’ll use for dinners and egg scrambles in the mornings.)
First I put 3lbs of chicken breast in a crockpot on high for 3.5 hours. I seasoned with Butt Rub and added 1/2 cup water. Put the lid on, and let it do it’s thing. (This is the easiest, and took me about 2 minutes!) Once it finishes, take two forks and shred.
Then I heated the oven to 425 degrees. I took 5 sweet potatoes and poked holes in them with a fork. Then I sprayed each one with olive oil cooking spray, seasoned with salt and pepper and lightly wrapped with foil. I baked these for 1 hour. (Again, so easy and this took about 5 minutes!)
When the sweet potatoes were done I used the oven again for the turkey tenderloin. Just sprayed a baking dish with olive oil cooking spray, added the tenderloin that I seasoned with Butt Rub, covered with foil and cooked for 1 hour at 375 degrees. (another 5 minutes of “cooking”)
Once that was finished I needed the oven one more time. I cranked the heat up to 425 degrees. Put all my cauliflower and broccoli on a foil lined baking sheet. Sprayed with olive oil cooking spray and seasoned with salt and pepper. I cooked this for about 30 minutes.(another 5 minutes of “cooking”)
The best part is, up until now, all I’ve done is taken about 5 minutes each hour to throw something in the crockpot or oven…so now while my veggies cook in the oven, I guess it’s time for me to cook a little haha, if you can call it that.
I took my bell peppers, sprayed with olive oil cooking spray and seasoned with salt and pepper. I cooked them on the stove over high heat until really browned up.
“Cook” each bag of rice in the microwave.
Open the black beans with a can opener lol.
Meal 1: 4oz of turkey breast tenderloin, sliced, with 2 tbsp of salsa, 3/4 cup of brown rice, 1/4 cup of black beans
Meal 2: 4oz of shredded chicken, 1 tbsp of buffalo sauce, 130g of sweet potatoes, and 1 cup of cauliflower/broccoli.
You can adjust amounts as needed!
