Tomorrow is the second Friday of Lent, and if you are looking for something to make for dinner, I got you covered!

 

What You Need:

1lb Shrimp, peeled and deveined

1-2 bags Uncle Ben’s Rice (white or brown)

1 package of Frozen veggies (peas, carrots, corn)

2 eggs

2 tbsp of Chili Garlic Sauce (I use this kind)

2 tbsp Coconut Aminos

1 tbsp of Olive Oil

2 Green Onions, chopped

 

In a bowl toss your shrimp in the chili garlic sauce and season with salt and pepper. **This is pretty spicy, for less spice use 1tbsp or less of the chili garlic sauce or you can always just use salt and pepper.

Heat olive oil in a pan over medium-high heat. Place shrimp in pan and cook on one side for about 90 seconds, and flip to cook for another 90 seconds, remove.

Cook your veggies in the microwave to thaw out. Drain, and put in the same pan you cooked the shrimp in.

Cook your rice in the microwave and then add to the pan of veggies.

Make a well and scramble your eggs right in the same pan and stir into the rice and veggies.

Pour in the coconut aminos, and stir. Lastly toss in your shrimp and top with green onions.
