Instead of traditional beef or chicken tacos for our Taco Tuesday, I decided to make fish tacos, with some fresh cod they had at Earth Fare today. This would be another great recipe to make on a Friday of Lent. I served with mango salsa and a side of white rice and black beans with cilantro.


Fish Tacos

What You Need:

Fresh Cod Filets, cut in 3oz pieces, (1 per taco)

Butt Rub or Favorite Seasoning

Corn or Flour Tortillas

Optional Toppings…

Bolthouse Avocado Ranch Dressing

Shredded Lettuce

Mango Salsa (recipe below)


Sour Cream

Spray with olive oil cooking spray, a pan over medium-high heat, and add your cod, seasoned on both sides. (make sure your pan is really hot before adding fish so it gets a nice blacked crust.) Cook for about 2-3 minutes per side. Once finished just assemble your tacos however you like them..easy! easy!


The Mango Salsa

What You Need:

2 Mangos peeled and diced

1 Jalapeno chopped finely (optional: leave in seeds/ribs for extra spice)

1/3 cup Red Onion diced

2 tbsp Lime Juice

1/4 cup Cilantro Leaves roughly chopped

Salt & Pepper to taste

Simply mix all the ingredients together and pour your lime juice over the top. Season well with salt and pepper to taste. You can make ahead of time and keep in the fridge. I remove the ribs and seeds because Jaxon eats it as well.


For our tacos we will have a 3oz piece of fish in one tortilla, topped with mango salsa and drizzled with the Bolthouse Ranch Avocado dressing and some fresh cilantro.
