I’ve been looking to make some lighter meals for hot summer evenings and this one was perfect! Plus I always love when Ryan can fire up the grill and I don’t have to “cook”. Tonight we made shrimp and pineapple skewers.
What You Need:
8 wooden skewers
1lb Shrimp, peeled & deveined
Pineapple, chunks (about 30…I bought these in a container already cut up)
Trader Joe’s Chili Lime Seasoning (or favorite seasoning for shrimp)
I also served this dinner with…
1 bag Uncle Ben’s White Rice
1lb Fresh Asparagus, grilled
Whole Foods Guacamole
Soak your wooden skewers in water for about 30 minutes. Then toss your shrimp in the chili lime seasoning. To build your skewers (I did 4 shrimp and 4 pineapple per skewer, which was 2oz of shrimp per skewer) layer on a piece of shrimp and then a pineapple chunk and alternate.
Spray your grill with olive oil spray to prevent sticking and throw the skewers on. These cook up pretty fast, so watch them. Once shrimp look pink go ahead and turn once. These took just about 2 minutes or so per side.
These made about 7.5 skewers, I didn’t get quite an 8th one full, as I ran out of shrimp.
Then like I mentioned above, I served with white rice, asparagus, and to add some fats, Whole Foods guacamole.
