I love when I can make a really healthy, fresh dinner for us, that tastes good and you can feel good about eating it. That was how this made me feel. All the organic veggies, ground turkey and an egg…that’s it!

 

What You Need:

1lb Lean Ground Turkey (I used 93% lean)

2 large Sweet Potatoes, peeled and cubed into bite-size pieces

1lb Brussels Sprouts, cut in half

1 cup Mini Bell Peppers, chopped

1 Red Onion, chopped

1 Egg per person (This recipe will easily feed 3-4 adults and you can always add more veggies/your favorite veggies)

Olive Oil Spray

Butt Rub or Salt & Pepper to season

Salsa, optional but delish to top with

 

Spray your cast iron skillet, or non-stick pan with cooking spray and set to medium-high heat. Season your ground turkey with Butt Rub or salt and pepper and cook in your pan. Once cooked through remove and put on a plate for later.

 

  

Next add your sweet potatoes and Brussels sprouts to the pan, season, and cook until tender, about 12 minutes or so and then add in your bell peppers and onion. Season these with salt and pepper or again you can use Butt Rub. Continue cooking and stirring every now and then until veggies begin to brown up.

Once your veggies are done add back in your ground turkey to heat through.

In a separate pan, over medium heat cook your eggs, over-easy is best to get that runny yolk : )

 

Spoon out the veggie mixture to plate, and top with salsa, and your egg. It’s also great to toast up a piece of bread with jam and eat a bite of everything on the toast!

    Made this for dinner tonight- everyone loved it. I came home from work, grabbed my paddle board and went to the lake. Came home and made this delicious dinner for my family. The kids did the preparation and we were done eating by6:15. Love quick dinners!! Thanks for sharing💕
