Last night I was out with the girls, and needed to throw something together for dinner for Jaxon and Ryan. I used some things we had on hand, and was so happy with how this turned out!

 

What You Need:

1-2lbs of Chicken Breasts

1lb of Fresh Green Beans

2lbs of Red Skin Potatoes, quartered

1/2 cup of Water

——–

Juice of 1 Lemon

3 tbsp of Olive Oil

1 tbsp of Garlic, chopped

1/2 tsp Salt

1/2 tsp Pepper

 

I first added about a 1/2 cup of water, or less, to the crockpot just to have some moisture on the bottom.

Set up your crockpot, like pictured below, potatoes on one side, chicken in the middle and green beans on the other side.

Next combine in a small bowl your fresh squeezed lemon juice, olive oil, garlic, salt and pepper and whisk together. Pour over the potatoes, chicken and green beans in the crockpot.

Set your crockpot to high and close the lid. Dinner should be ready in 3.5 – 4 hours! Enjoy!

This would also be really good with pork or chicken thighs.
