If you are in need of a low carb dinner, that does not skip on flavor, I have just the one for you! Tonight I made halibut and zoodles, and it was light, and perfect for a hot summer day.

 

What You Need:

5-6oz Halibut Filet, for each person (I made 3)

1 carton of Grape or Cherry Tomatoes

1 Package of Zoodles (about 3 cups)

2-3 Garlic Cloves, minced

3 tbsp Olive Oil

1.5 tbsp Lemon Juice

Salt & Pepper

Dairy Free Parmesan (optional)

 

Pre-heat your oven to 425 degrees. Place halibut filets (skin side down) on a foil-lined baking sheet. Mix together lemon juice, and 1tbsp olive oil. Brush over the fish. Then season generously with salt and pepper. Bake in the oven for about 12 minutes or until fish is cooked, and easily flakes with a fork.

In a pan over medium heat, add 2 tbsp olive oil and your cherry tomatoes. Season with salt and pepper. Let the tomatoes cook down and start to burst open. Then turn down the heat to medium – low and add your garlic. Let cook for a few more minutes.

Set aside a little of the tomato mixture so you can top your fish with it.

Then put your heat back up to medium, and add your zoodles. (I sprayed mine with a little more olive oil spray). Add salt and pepper and cook for about 90 seconds – 2 minutes.

When your fish is done, take a spatula and the filet should come away easily from the skin which will be left on the foil. Spoon some of your tomato mixture on top. Next to that add some of the zoodles and top with dairy free parmesan. (optional).
