I love throwing together this simple bowl for a flavorful and healthy dinner. It’s a family favorite, and I hope you enjoy it too!
What You Need:
1lb of Chicken Tenders (or breasts cut into bite-size pieces)
1 Bag of Uncle Ben’s Instant Rice (brown or white, or make your own rice)
2/3 Red Onion, sliced
1/3 Red Onion, finely chopped
1 Cucumber, diced
1 Carton Grape Tomatoes, halved
5-6 Mint Leaves, chopped
Juice of 1/2 Lemon
1tbsp Olive Oil
Salt & Pepper
Red Pepper Hummus (or your flavor of choice)
Tzatziki Sauce (optional)
Feta Cheese Crumbles (optional)
Favorite Pita Chips for scooping (optional)
*This amount serves about 2-3 people. Jaxon, Ryan and I usually finish off all of this.
First lets put together your cucumber and tomato salad. In a bowl add the cucumbers, tomatoes, onion, lemon juice, olive oil, mint leaves, salt and pepper. Stir together and combine, then place in the fridge until it’s time to eat. (You can always make this ahead of time, as it can sit in the fridge overnight.)
You can use salt and pepper or your favorite seasoning to season your chicken. I used Butt Rub. Then in a pan over medium-high heat, spray with olive oil spray, and add your chicken tenders. The left-over red onion I also put in the pan to sauté to add to the bowls.
While this is cooking throw your rice in the microwave.
Once the chicken is cooked through and your onion is nice and browned, take off the heat, and now we can build the bowls.
First I add the amount of rice desired, then a few big scoops of the cucumber and tomato salad. Next add your chicken tenders and sautéed red onions. Then top with your favorite hummus and Tzatziki sauce. The ones I love are pictured below. You can also add some feta cheese and serve with pita chips. Enjoy : )
