My mom made this granola for us to snack on last week, and well it lasted less than 24 hours in our house. It was so good, and my favorite was having it on top of some dairy free vanilla yogurt.
What You Need:
1/2 cup Brown Sugar
1/2 cup Honey
1/4 cup Coconut Oil (melted)
1 tsp Vanilla Extract
3 cups Oats
1 cup Almonds, chopped
1/2 cup Shredded Coconut
1 cup Dried Cranberries (or raisins/craisins)
1/2 tsp Salt
Pre-heat your oven to 300 degrees.
Mix together the brown sugar, honey, coconut oil, vanilla and salt in a bowl. Put oats, almonds, coconut and cranberries in a larger bowl. Pour the brown sugar mixture over the oats and stir until completely coated.
Line a cookie sheet with parchment paper and pour on your oats mixture. (If you have extra honey I like to drizzle a bit on top before baking.)
Bake for 25 minutes, stirring halfway though.
Allow to cool, then break off pieces and store in a ziplock bag.
Again this is so good over yogurt, just for snacking, or with almond milk. Enjoy : )
