I loved this quick dinner we had the other night! It was so easy to make, only a few ingredients, and the whole family liked it. There are a ton of recipes online for similar dishes, but here is exactly what I did, and I wouldn’t change a thing!
What You Need:
1.5 lbs of Ground Sirloin (93% lean)
1 jar of Rao’s Marinara Sauce
5-6 Zucchini, all about the same size
Olive Oil Spray
1/2 – 3/4 cup of Shredded Cheese (you can use dairy free too, we did on some for Jaxon)
Salt & Pepper
Pre-heat your oven to 400 degrees.
Season your ground meat with salt and pepper or Butt Rub and cook over medium-high heat until cooked through. Drain off any extra grease. Then add in your jar of marinara sauce and let simmer for about 5 minutes.
While your meat is cooking wash your zucchini and dry. Then cut off the ends and cut in half length-wise. Scoop out the center with a spoon and arrange in a bake dish, sprayed with olive oil spray. Next spray your zucchini with olive oil spray and season with salt and pepper.
Scoop your meat and sauce mixture into the zucchini boats. It is totally fine for this to spill over the sides and into the baking dish. Then top with amount of shredded cheese desired.
Bake in the over for 25 minutes.
I think these would also be a fun appetizer when you have people over too. You could even cut them in half to make them more bite-size.
This should feed about a family of four. I had three boats, Ryan had five, and Jaxon had two and we still had some left over!
One thing we wish we said we had with this dinner was some good crusty bread we could soak up the extra meat sauce with : )
