Who needs a sweet treat for Valentine’s weekend? I saw a recipe similar to this on Pinterest or Facebook a while back and decided to recreate it, but made it dairy, nut, and soy free.

What You Need:

1 Apple, cut in half

1/4 tsp Earth Balance Butter (one with the red lid to be soy free too)

1/2 tsp Truvia Brown Sugar

Crumble Topping:

1 tbsp Earth Balance Butter (one with the red lid to be soy free too)

1 tbsp Truvia Brown Sugar

1/4 cup Rolled Oats

1/2 tsp Cinnamon

1/4 cup Vanilla Ice Cream, optional (So Delicious Vanilla, dairy/soy free)

Preheat your oven to 350 degrees. Take your apple halves and with a sharp knife make thin slices but do not cut all the way through the apple. (Kind of like a fan, if you will.)

Take a 1/4 tsp of butter and spread over top of both apples. Then sprinkle both with the 1/2 tsp of brown sugar. Bake in the over for 20 minutes.

When they come out of the oven combine the butter, brown sugar, and cinnamon and melt in the microwave. Add in your oats and stir. Top the apples with this mixture and put back in the oven for 25 – 30 minutes or until apples are soft.

Top with ice cream, if desired.

Macros (without ice cream): 30g carbs/ 6.5g fat/ 2g protein

Macros (with ice cream): 39.5g carbs/ 10g fat/ 3g protein
