I’ve found dinner time more challenging this past month…three month old..witching hour..toddler getting tired/hangry. Not the best time to spend 30 minutes in the kitchen, especially if I can’t put the baby down, and if Ryan isn’t home to help occupy the kids. So on nights like this I need something easy!
I can basically prep this entire dinner in about 10 – 12 minutes, ahead of time, so when witching hour hits I can be on with the kids and out of the kitchen.
What You Need:
2-3lbs Pork Loin (or any pork, but this lowers fats)
Favorite Seasoning, I use Butt Rub, or just Salt & Pepper
1/2 cup of Water
Throw that all in the crockpot on high for 4 hours (could probably do low for 8 hours too, I just have not yet tried it that way.)
2-3 Sweet Potatoes, peeled and cubed
2-3 Apples, cubed
Salt & Pepper
Olive Oil Spray
(Optional: BBQ Sauce, an Egg)
You can prep this ahead of time…but a little tip, cut your sweet potato pieces a little smaller and apple pieces a little thicker so they get done in the oven at the same time. (If you cut up your apples ahead of time, squeeze with lemon juice so they do not brown.)
When your pork has about 45 minutes left, preheat your over to 400 degrees. On a foil lined baking sheet, sprayed with olive oil spray, spread evenly your sweet potatoes and apples. Keep your sweet potatoes and apples on separate parts of the cooking sheet. Spray both with olive oil spray, and season the sweet potatoes with salt and pepper and the apples with cinnamon. Put in the oven for about 20 – 25 minutes. Toss half way through.
When your pork is done, shred with two forks.
To build your bowl, first put down your sweet potatoes, then top with your pork and mix in the bbq sauce. Then top with your apples, and add a fried egg if desired! This is one of my new favorite go-to’s and it keeps you out of the kitchen during witching hour!
