Another crockpot meal…but man this has made life so much easier, or at least hours 5pm – 6pm! I can prep ahead of time, when babies are sleeping or occupied, then around 6pm, open the lid, and dinner is done!
What You Need:
Chicken Breasts (I usually do 2 – 2.5 pounds)
1lb Mini Gold Potatoes
1lb Baby Carrots
1/2 cup Water
3 Tbsp Earth Balance Dairy/Soy Free Butter (can use regular butter too)
3 Cloves Garlic, chopped
3 Sprigs of Fresh Rosemary
1 Tbsp of Thyme
Salt & Pepper to season
I’ve been finding lately if I cook chicken in the crockpot on high for 4 hours, it gets dry. I’ve been doing about 3 hours on high or 6 hours on low. So set your crockpot for the time frame desired.
Season your chicken with salt and pepper and then add it to your crockpot along with your carrots, potatoes and water.
Put your butter in a small bowl and melt in the microwave. Stir in your garlic, thyme, and rosemary. Pour butter mixture over chicken, carrots and potatoes.
