Cinco de Mayo is this Sunday, and I have the perfect meal you can make to get your fix of Mexican food AND it will make enough for lunches/dinners for a few days. Love when you can cook dinner and meal prep all in one!

What You Need:

4 lbs of Chicken Breasts (you can alter this amount for your needs, I did 6 breasts)

1 Green Bell Pepper, cut into long strips

1 Red Bell Pepper, cut into long strips

1 Orange Bell Pepper, cut into long strips

1 Packet of Fajita Seasoning

1.5 Cups of Salsa

That’s it! Throw it all in the crockpot on high for 3 hours.

Warm up some tortillas and build fajitas with the chicken and peppers and your favorite toppings! We also ate this the next night over a bowl of shredded lettuce and rice, and topped with black beans, salsa and guacamole.

Don’t forget a margarita! Happy Cinco de Mayo!!
