My parents have been making this simple spinach salad forever, and the other day I decided to make it for lunch to serve with salmon. It’s so easy and so delicious! Even our 3 year old will eat this salad!
1 Shallot, finely chopped
3 tbsp Butter (dairy/soy free for us)
1.5 tbsp Red Wine Vinegar
1 tbsp Honey
Salt & Pepper to taste
5oz Spinach
Melt butter in a saucepan over medium heat. Add in your shallot and cook for 2-4 minutes until translucent, not browned. Remove from heat and whisk in the honey and red wine vinegar. Pour mixture over your spinach. That’s it!
Make as a simple side; we love this with pizza! Or you can use as a main dish, salad and add a protein and whatever toppings you love! I think pears, walnuts and a goat cheese would be so good.
