I’ve been loving dinners that are more interactive, more sharing or build your own type of thing. So thought I would do another one for Taco Tuesday tonight with fish tacos : )

What You Need:

For the Fish:

Cod Filet (I did 2 pounds for 2 adults and 2 young kids and we had more than enough)

Olive Oil Spray

Butt Rub or Salt & Pepper to Season (or other favorite seasoning)

Juice of half a Lemon

For the Slaw:

1/2 Bag of Slaw

1 Jalapeno, chopped (seeds & ribs removed for less heat)

1/4 cup of Mayonnaise

1 tsp of Honey

Juice of 1/2 a Lime

Fresh Cilantro to season

Salt & Pepper to Season

Extras:

Whole Foods Guacomole

Your Favorite Tortillas (Siete are our favs!)

Other Sauces – Chipotle Ranch, Salsa, Mango Salsa, etc.

Pre-heat the oven to 400 degrees. Line a baking sheet with parchment paper or foil and spray with olive oil spray. Add your cod filet(s) and season with Butt Rub or favorite seasoning. Lastly drizzle with lemon juice.

Bake in the oven for about 15 minutes until flakey.

Take all the ingredients for your slaw and stir together in a bowl. You can adjust amount of mayonnaise depending on how dry/wet you like your slaw. I made this ahead of time and put in the refrigerator for a few hours.

Then build your platter. Set out the tortillas, and warm or grill them if desired. Put your salsas, guac and slaw in little bowls. Slice your fish and put that on the platter as well. Have fun with it!
