This turned out a lot better than I would have imagined! We actually loved it, and I cannot wait to make it again. I just searched for several pumpkin chili recipes, and couldn’t find one where I had all the ingredients listed, so I took some ideas from a few recipes and it was really good. There is not a strong pumpkin flavor, but the texture is amazing and you get all the nutrition benefits of the of the pumpkin.
What You Need:
1 lb. ground beef
1 Red Bell Pepper, diced
1 Onion, diced
1.5 Tbsp Chili Powder
1 Tbsp Cumin
1.5 tsp Garlic Salt
1 can Pumpkin Puree
1 can Black Beans, drained
1 can Pinto Bean, drained
2 cans (28oz) diced Fire-Roasted Tomatoes, not drained
Olive Oil Spray
Salt & Pepper to season
Spray a large pot with olive oil spray and saute onion and red pepper, then add in ground beef and cook through. Season with salt and pepper.
Next pour in the drained black and pinto beans. Then add in the tomatoes. Season with the chili powder, cumin, and garlic salt.
Stir in the pumpkin puree, and let come to a slight boil. Decrease the heat to simmer and cover for 20 minutes.
Serve with some crusty bread for dipping : )
