
My mom mentioned to me some nachos she heard about or saw on TV/magazine, and they sounded delicious! I knew I had to recreate something similar.
This is the easiest, tastiest recipe (not so healthy with all the chips and cheese, but a great indulgence, cheat meal!) It’s not a ton of “cooking either” more of assembling ingredients.
What You Need:
1 Bag of Tortilla Chips
1 Can Rotel Diced Tomatoes
1 Can Pineapple Tidbits
1 Bag of Shredded Queso Cheese
1 Avocado
1 Pork Loin (1-2lbs)
Favorite BBQ Sauce
In a crockpot, place your pork loin (I seasoned mine well with Butt Rub, but you could use S&P or your favorite seasoning) and add about 1/4 cup of water. Cook on low for 8 hours. (I think this low heat/long cooking time is key!)
When your pork is done, shred with a fork and toss in bbq sauce.
Spray a cast iron skillet lightly with olive oil spray, and fill with tortilla chips. Top the chips with your shredded pork, pineapple tidbits, tomatoes, and then shredded cheese.
Next place under the broiler. Let the cheese melt (1-2 minutes). Remove from the oven and drizzle lightly with bbq sauce. Smash up your avocado with a fork and top the nachos. (You could also add salsa, cilantro, jalapenos, sour cream, whatever your favorites are.)
We ate this entire skillet it was so good. It would be a great thing to make when having friends over, or so much fun for a family dinner night.
