
A Week of Healthy Dinners + Grocery List
Happy 2021! My first blog of the new year, and first blog in months! (I’m hoping to change that in 2021!!)
I wanted to start out the new year, with a little organization when it comes to meal time. Here are our plans for each night starting Monday, plus a grocery list including all the ingredients I’ll need and some other staple items we eat all week.
Dinners..
Monday – Salmon with roasted broccoli and brown rice. I bake my salmon and season it with butt rub and a little brown sugar for that spicy/sweet taste. The broccoli I’ll steam and use 90 second brown rice.
Taco Tuesday – a weekly staple…lean ground beef with taco seasoning, in a bowl with shredded lettuce and/or rice, black beans, sauteed peppers/onion, salsa, avocado, tortilla chips…anything that sounds good to you.
Wednesday – I’m going to marinade chicken breasts in a balsamic mixture (balsamic, olive oil, garlic, etc.) and bake in the oven. Bacon & brussels, no better combo, and I’ll throw some sweet potatoes in the crock pot.
Thursday – One pan, the best kind of meal! Chopped zucchini, squash, peppers, onions and Bilinski chicken sausages all roast in the oven. Then I’ll toss them in Rao’s for a low carb dinner. (I’ll make noodles for more carbs for the kids.)
Friday – White Chicken Chili
