Chili Lime Chicken Bowl

I was looking for a way to use my Trader Joe’s Chili Lime Seasoning, and this is what I came up with. It’s also full of nutrient dense foods and great flavors!

What You Need:

Okay, ingredient amounts depend on how many bowls you want to make/people you are serving…below is for four, pretty good size bowls.

1.5 lbs of Chicken Tenders

1 can of Black Beans

1 bag of Frozen Corn

2 bags of Fresh or Frozen Cauliflower Rice

1 package of Cherry Tomatoes, halved

1 Avocado, sliced

1 bunch of Fresh Cilantro

1 Lime

Trader Joe’s Chili Lime Seasoning

Primal Kitchen Cilantro Lime Sauce

First, season your chicken tenders well with the Trader Joe’s Chili Lime seasoning. Then saute over medium/high heat, or you could grill.

Cook your corn in the microwave or stove based on packaged directions.

In a large pan, cook your cauliflower rice based on package directions. Once thawed out, or cooked to your liking, season with Trader Joe’s Chili Lime seasoning. Then add the juice of half of one lime, s&p, and fresh cilantro (I know some people love cilantro, and others do not. Add as much as you would like, or hold off on it all together.)

I like to heat my black beans in the microwave after the corn comes out.

Then it’s time to assemble the bowls. Spoon in your cauliflower rice first. Then add your corn, black beans, tomatoes, avocado and chicken.

I like to garnish mine with a lime, some more fresh cilantro and one last dash of Trader Joe’s Chili Lime seasoning, and a healthy drizzle Primal Kitchen’s Cilantro Lime Sauce.
