This NOT That: Kids’ Snack

For this week’s This NOT That, I’m sharing a treat my kids have enjoyed for a few years and I really enjoy the simple ingredients! Bear products are a clean snack, and these strawberry fruit rolls are our favorite! It’s a better option to a fruit roll-up or fruit snacks. And they actually taste good!! Below I have compared the ingredients in Bear Strawberry Fruit Rolls and Fruit Roll-ups Strawberry Sensation flavor. I don’t think this one needs a big explanation. You know I don’[...]

Starting the Day off Right, With a Breakfast Scramble

I’ve been making it a priority, the past almost two weeks now, to start my day with protein, healthy fat, and veggies…and I’m starting to notice a huge difference! When you eat a ton of carbs, especially refined carbs full of sugar- pastries, cereal, pancakes, yogurt, etc. your blood sugar will spike, leading to a crash. Plus you will be hungry again sooner. Alternatively, a breakfast packed with protein, fats, and fiber will keep you feeling fuller longer. And I’m not here to bas[...]

Pivot

If there is one thing I've gotten better at lately, it's being able to pivot. Pivot, and give myself some grace. (Which I'm still working on.) Do you ever have those days where you think, okay, tomorrow I am going to eat healthy, workout, cook at home, and go to bed early. Basically you decide, tomorrow I am going to start living healthier, and maybe you plan it all out on paper. "I'm going to workout M, W, & F." "Monday we are having salad with grilled chicken, Tuesday I'll make tacos,[...]

Chicken Salad Recipe

I love making this simple recipe for a quick lunch, a kid's lunch to send to school, or an afternoon snack. It only takes about 5-10 minutes to put together. I think I love it so much because it's sweet, salty and has some crunch!   What You Need: 5 stocks celery, chopped 2 cups grapes, halved 1 rotisserie chicken, breast meat, chunked into bite-size pieces 5 tbsp of mayonnaise (I love this vegan mayonnaise.) 1/3 cup slivered candied almond[...]

Chili Lime Chicken Bowl

I was looking for a way to use my Trader Joe's Chili Lime Seasoning, and this is what I came up with. It's also full of nutrient dense foods and great flavors! What You Need: Okay, ingredient amounts depend on how many bowls you want to make/people you are serving...below is for four, pretty good size bowls. 1.5 lbs of Chicken Tenders 1 can of Black Beans 1 bag of Frozen Corn 2 bags of Fresh or Frozen Cauliflower Rice 1 package of Cherry Tomatoes, halved 1 A[...]

A Week of Healthy Dinners + Grocery List

Happy 2021! My first blog of the new year, and first blog in months! (I'm hoping to change that in 2021!!) I wanted to start out the new year, with a little organization when it comes to meal time. Here are our plans for each night starting Monday, plus a grocery list including all the ingredients I'll need and some other staple items we eat all week. Dinners.. Monday - Salmon with roasted broccoli and brown rice. I bake my salmon and season it with butt rub and a little brown suga[...]

Healthy Meal Planning

With everything going on in the world right now, we are really trying to stay home, which means limiting my every other day grocery runs, to every 7-10 days. The last few weeks I've flown in and out of the grocery store, quickly picking up foods we like. The only problem is, towards the end of the week, we have a bunch of random ingredients left that don't really go together to make a meal. Then things go bad, get thrown out, and I order caryout. So this week, I'm changing that. I took 20 m[...]

BBQ Pulled Pork Nachos

My mom mentioned to me some nachos she heard about or saw on TV/magazine, and they sounded delicious! I knew I had to recreate something similar. This is the easiest, tastiest recipe (not so healthy with all the chips and cheese, but a great indulgence, cheat meal!) It's not a ton of "cooking either" more of assembling ingredients. What You Need: 1 Bag of Tortilla Chips 1 Can Rotel Diced Tomatoes 1 Can Pineapple Tidbits 1 Bag of Shredded Queso Cheese 1 Avocado 1 Pork[...]

Kroger ClickList

Who is meal prepping for the week? Planning healthy dinners for your family? I don't know about you, but grocery pick-up and delivery has been a huge time saver for us. Right now I'm watching NetFlix and grocery shopping, and not dragging my two young kids through the grocery aisles. If you need some inspiration, here is my grocery order from Kroger this week. You'll notice I try to choose organic, grass-fed, and wild caught when possible. For dinners we'll be having sweet potato hash, caul[...]
