Aldi Haul

Kollyns and I went to Aldi this week for the first time in years. I've been reading so much about the changes they were making- organic produce, sustainable bags, etc. I'm glad I went. Here is what I found, and my review of our trip! My Cart Gingerbread House Kits Peanuts Pretzels Bananas Baguette Salsa Hummus Cucumbers Lunch Packs Peppers Brussels Sprouts Egg Whites Ground Turkey Chicken Breasts Sweet Potatoes Frozen Vegetables Orange[...]

PASTA FAGIOLI SOUP

I didn't come up with this recipe. I found it. I made it. It is so good! I had to share!! This is such a hearty soup, and I thought it would be great to make if you were hosting Thanksgiving or Christmas, and had family in town. You work all day to prepare a huge meal, but what do you feed the people the other days they are there? You don't want to be back in the kitchen, that's for sure. That is why this soup is perfect: It makes a ton!You only use one pot! It's allergy friendly!It's[...]

Healthier Halloween Treats

Halloween is quickly approaching, which can also mean lots and lots of sugar. Now don't get me wrong, I let my toddler have some sugar, especially on special occasions, like Halloween night. But with school, parties, etc. Halloween seems to be celebrated for at least a full week, so I've created some healthier, lower sugar alternatives for both you and your littles. Most of these items are extremely allergy friendly as well! Boo Bark! I used SoChatti’s meltable chocolate. SoChatti is[...]

Pumpkin Chili

This turned out a lot better than I would have imagined! We actually loved it, and I cannot wait to make it again. I just searched for several pumpkin chili recipes, and couldn't find one where I had all the ingredients listed, so I took some ideas from a few recipes and it was really good. There is not a strong pumpkin flavor, but the texture is amazing and you get all the nutrition benefits of the of the pumpkin. What You Need: 1 lb. ground beef 1 Red Bell Pepper, diced[...]

Brunch Bowl

Last Sunday (and again this Sunday) we went to Rosie's Place in Noblesville for brunch. My diet is still limited by Kollyns's food allergies, but one thing I love to get there is the Fall Veggie Hash. It is: Quinoa topped with roasted sweet potatoes, onions, brussel sprouts, mushrooms, baby spinach, and fresh sage topped with 2 poached eggs, hollandaise, and balsamic drizzle (But I get my eggs over-easy and no hollandaise sauce.) So this past week, I was like I can totally make something sim[...]

S’mores Popcorn

This is such a delicious summer snack that the kids can help make, especially when they want s'mores but you don't want to make a bonfire. We saw something similar to this on the Today Show last week, and we made ours dairy and soy free! What You Need: Popcorn (you can microwave a bag, make your own on the stove top or grill, etc.) We used 3 tablespoons of popping corn kernels with 1 tablespoon of oil and cooked on the stovetop in a covered pan until popped, then salted it. (Jax said[...]
