This NOT That: Kids’ Snack

For this week’s This NOT That, I’m sharing a treat my kids have enjoyed for a few years and I really enjoy the simple ingredients! Bear products are a clean snack, and these strawberry fruit rolls are our favorite! It’s a better option to a fruit roll-up or fruit snacks. And they actually taste good!! Below I have compared the ingredients in Bear Strawberry Fruit Rolls and Fruit Roll-ups Strawberry Sensation flavor. I don’t think this one needs a big explanation. You know I don’[...]

Eating Out With Food Allergies, Made Easier

Food allergies can be tough, especially when you are first figuring them out and navigating through it all. I wanted to create a resource, I wish I had three years ago, to help others going through the same thing. This one is all about eating out at restaurants...something I think is the most challenging and even at times scary. So here is my back story, advice, and tips, that will hopefully make eating out easier. Also note, I'm not a doctor of any kind, this is just my journey and what has wo[...]

Grinch Pancakes

Totally random, how this came about...I was cleaning out some drawers in the kitchen and Jaxon saw the food coloring. He kept saying, "I want to play this!" I tried to explain to him it wasn't paint, etc. and then thought, how can we cook with this. I looked through pantry/fridge to see what we had on hand and this is what I came up with...Grinch Pancakes! We had them this morning, which was perfect because we took him to the new Grinch movie last night..so cute! What You Need: Pancake[...]

Dairy Free Robin’s Egg Nest Treats

I wanted to find a dairy and egg free treat that Jaxon could have for Easter, and found this easy one on the Rice Krispies website. Full Recipe Here. To make it dairy free, all I did was substitute the butter for coconut oil, and it turned out perfectly. Also, instead of chocolate "eggs" we used jelly beans to put into the nests. This is also a fun one to make with the kids.

Buffalo Chicken Cauliflower Rice

A few weekends ago we were in Chicago eating some delicious chicken wings, but the fats were so high! On the drive home I did some thinking on how I could lower the fat, but still have a great tasting meal. Here is what I came up with..   What You Need: 1lb of Pulled Chicken (I used leftover pulled chicken I made in the crockpot) If you don't have any on hand to use, just throw your chicken breasts in the crockpot with your favorite seasoning (I use Butt Rub) and about a 1/2 cup of[...]
